Strawberry, Rhubarb, and Walnut Crumble (or Crisp)

Strawberry, Rhubarb, and Walnut Crumble (or Crisp)


  • 1 cup oats
  • 3/4 cup + 1 Tbs whole wheat pastry flour
  • 1/2 cup raw sugar
  • 1/4 tsp salt
  • 3/4 cup raw walnuts, chopped small
  • 6 Tbs cold butter (plus some for oiling pan)
  • 1/2 cup unsweetened organic apple sauce
  • 5 cups hulled and quartered fresh strawberries
  • 4 cups rhubarb, cut into 1/2 inch pieces
  • 2 Tbs fresh lemon juice
  • 1/2 cup honey


  1. Preheat oven to 375°. Coat an 8-by-11-inch baking dish with butter.
  2. In a medium bowl mix together oats, 3/4 cup whole wheat pastry flour, sugar, salt, chopped walnuts. Cut in 6 Tbs butter and incorporate with hands until crumbly. Mix in apple sauce
  3. Place strawberries and rhubarb into a large bowl. With rubber spatula, gently mix in lemon juice, honey, and 1tbs whole wheat pastry flour
  4. Pour fruit mixture evenly into prepared baking dish. Sprinkle the oat mixture on top. Bake for 35-45 minutes, until fruit is tender and crumble topping is golden brown
