Spring Spinach and Sprouts Salad

Yield: 3-4 servings

Ingredients

  • 10oz of fresh tortellini
  • 4oz (two huge handfuls) of fresh spinach, chopped
  • 2oz (two small handfuls) of radish sprouts {other plant sprouts would work also}
  • 1 small handful of freshly shredded parmesan cheese
  • Dress With:
  • Extra-virgin olive oil
  • Salt and pepper

Instructions

  1. Cook fresh tortellini according to package directions. After straining, rinse under cold water to stop cooking process and cool them off
  2. In a large bowl, toss cooked tortellini with spinach and radish sprouts. Reserve a bit of sprouts to top your salad with
  3. Garnish your salad with your remaining sprouts, Parmesan, enough olive oil to coat, and salt and pepper to taste. You can also add additional dried or fresh herbs to your liking.

Notes

In 5 minutes, with 4 ingredients, and at $2 a serving, this salad is a perfectly delicious and elegant side dish for parties, BBQ's, and picnics!

For your tortellini, Trader Joes has a fantastic spinach tortellini for $1.99. It's a bit more processed and has more ingredients than I'd like, but for a quick fresh salad, I'm not about to make tortellini by hand 😉
