Simple Gluten Free Sugar Free Cornbread Muffins
Ingredients
1 egg
2 cups buttermilk (or 2 cups milk mixed with 2Tbs white vinegar)
1 teaspoon baking soda
2 1/2 cups Namaste perfect gluten free flour blend
1/2 cup cornmeal
½ teaspoon salt
Instructions
Preheat the oven to 350 degrees.
Beat the egg in a medium bowl.
In a separate bowl, mix the dry ingredients together.
Add dry mixture to the egg mixture, alternating with the buttermilk, until combined.
Put in greased muffin tins and bake 18-20 minutes until firm and beginning to brown.
