I am not a big banana fan, so I don’t prefer these pancakes, but they are the only way I got my three-year-old to include free-range eggs in his diet–he loves these pancakes! And I love them because they are quick, cheap, easy, gluten-free, and packed with omega-3s for my growing boys!

Be sure to use eggs that came from pastured chickens (read more here), that way you get all of those amazing omega-3s! The ground flax also adds plant-based omega-3s.
