Ingredients

• 1/2 cup plus 2 Tbsp. coconut oil (Or softened butter)
• 1/2 cup applesauce (organic, unsweetened)
• 1/2 cup raw sugar
• 1/2 cup homemade or organic peanut butter
• 2 eggs
• 1 tsp vanilla
• 1 1/2 cups whole wheat pastry flour
• 1 tsp baking soda
• 2 1/2 cups oats
• 1 cup shredded coconut (unsweetened)
• 1 cup dark chocolate chips

Instructions

1. Heat oven to 350 degrees. In large bowl, beat butter, apple sauce, sugar and peanut butter until creamy
2. Add eggs and vanilla; beat well.
3. Add flour and baking soda; mix well.
4. Add oats, coconut, and chocolate chips.
5. Drop by rounded spoonfuls onto greased cookie sheet or stone.
6. Bake 8 to 10 minutes or until light golden brown. Enjoy!
